Prosciutto di Parma PDO, Mortadella di Bologna PGI, Coppa, Parmigiano Reggiano PDO and Gorgonzola PDO. Accompanied by fried gnocco and confit tomatoes.
Burrata cheese with Mortadella di Bologna PGI, crispy Grana Padano PDO and confit tomatoes. Accompanied by Tartufo e Taleggio sauce, mixed leaves, Taggiasca olive, ground pistachio and dried tomato and basil oil.
Stuffed with tomato, mozzarella, Prosciutto di Parma PDO, provolone, mushrooms and poached onion. Accompanied by Grana Padano PDO shavings and dried tomato and basil oil.
Orange Mascarpone mousse with strawberry jam and ground pistachio. Accompanied by crunchy almond tuiles.
